Flax-Berry Pancakes with Simso's Strawberry Sauce

When I find a recipe I like, I sometimes get into a rut.  I've been making the same pancakes for over a year now and this morning decided to bust out a few cookbooks and look for something new.  My choice was Flax-Berry Pancakes from Vegan Planet: 400 Irresistible Recipes with Fantastic Flavors from Home and Around the Worldand to top it all off Simso's Strawberry Sauce from Vegan World Fusion Cuisine.  I must say, as a Canadian who can't imagine using anything but maple syrup on my pancakes this was a pretty radical idea.

The pancakes were tasty and easy, except for the bit where you have to scrape ground flaxseeds out of the blender jar.  I was a little more hesitant about the strawberry sauce it but exceeded my expectations.  The recipe called for chopped strawberries, water, a little sweetener of your choice (I used agave), mirin, a pinch of cinnamon and a pinch of cardomom which I hate so I left that out.  My only complaint is that it only made enough for one person.   Next time I will double or triple the recipe.  All in all though, it was a successful breakfast and my weekly cooking challenge is complete!

    And, as your mentioned over at Kathryn's blog, I'd love if you'd make and post the Gallo Pinto black beans and rice with seasoning Costa Rican recipe!! I love anything with black beans and I can tell I'd love this and so I'd love to see a photo and recipe.

  2. Mmm! Yum! And, congrats for branching out of your maple syrup (but, gosh, you have a right to enjoy it and sport some Canadian pride; I love me some maple syrup!)

    Just curios re: the agave because I know you are trying to cut sugar. Do you find that the agave makes you feel better than consuming sugar would? I am finding that I really have about zero tolerance for sugar anymore; it makes me feel jittery after I eat it and then super tired in the mornings. And I always cut WAY back on the sugar in recipes and use it only for baking. I have tired brown rice syrup and like it but it's expensive....

  3. Kathryn, I am trying to limit all sweeteners but I do notice that when I eat sugar I don't feel good. And like you, the next day my energy levels are severely affected. I get extremely sluggish and tired. I use small amounts of agave or maple syrup and it doesn't seem quite so bad. For me, sweetened baked goods are killer though. They always do me in. Sigh.

  5. Well, congratulations on keeping to your low-sugar diet, Lee! And good to know the agave or maple syrup is better. My husband and I are doing that, too. But, I agree, the baked goods are so challenging/tempting!
